The Scene
Don't let the location fool you. This tiny new venue surprises newcomers with a menu of personal creations highlighting local meats and produce. With bright olive walls and just 20 seats, the ambience is both cheery and cozy. A communal table in the center and easygoing service adds to a very relaxed, homey vibe.
The Food
Like the mighty local tree the restaurant is named after, entrees here are straightforward and very regional. The selections, scrawled daily on a chalkboard, typically feature local morels, chicken from Vashon Island and Pacific halibut. The food, with many fresh herbal accents, never loses the individual quality of the main ingredients--from carrot-lovage salad to striped bass and snap peas. A recurring favorite, the perfectly fatty pork belly with mint and fava beans, deserves a permanent position on the menu.

A friend and I dined at Sitka and Spruce last night, arriving at 5:30 p.m. and securing a nice table immediately. Unlike the experience of some diners, we had a terrific server who was informed about the food and wine, and she made our dining experience memorable. I liked the intimate size of the restaurant, and the noise level never became unbearable. We ordered three dishes from the blackboard which was, incidentally, a little difficult to read, and a nice bottle of wine. I thought all the dishes were very good, but none entered the relm of truly memorable, and prices did seem a little high. Dessert of a pine nut tort with rhubarb sauce was indeed excellent, and I would return to the restaurant again. I thought some of the combinations of ingredients were remarkable, and everything did taste fresh and delicious.

If you're looking for a great meal, Matt Dillon may be able to give it to you, if you can get noticed at the door. I've tried three times to dine here. The first time my date and I were left standing at the door for over 15 minutes without anyone saying hello. We notice every member of the staff look at us an continue doing what they were doing. We left feeling we weren't important maybe since they were already full. The next time I tried we were forgotton about on the list and put again at the end to wait another hour. I ended up being dragged back with two other friends who wanted to go, despite my warnings about their organization at the door. We got a table!! The food was as good as I expected; fresh, interesting and thoroughly thought-out. The server was aloof and uninformed about the menu. I think we saw him three times during the meal - once to take the order, once to drop the food, once to drop the bill on the table without saying even thankyou. I'm sad. Usually if the food is good enough somewhere, I'll forgive the service to some degree. Not at Sitka. Hopefully they'll hire better at Corson.
