I was thoroughly satisfied by my thanksgiving 2001 stay at the Dylan--the room was small (this is NY) and had no view, but the place was graciously appointed and design-oriented. Our quarters had a floor-to-ceiling blue taffeta curtain and all-white bed linens. The chemistry theme (this used to be the Chemist's Club) doesn't really hold water but the place is very nice nonetheless.

Pros: great linens

Cons: pretty pricey

The Alchemy Suite was once the Chemists Club's medieval-style library; the restaurant and lounge, with 20-foot-high ceilings, was the dramatic great hall.
